Glazed Oatmeal Cranberry Cookies

It's officially spring, therefore I want to eat fruit with everything. I keep making Lemon flavored desserts in the shop, yesterday I had Lemon French Macarons, Lemon YiaYia Cookies and Lemon Shortbread... I need to get off the lemon train. So, when I was eating my handful of dried cranberries today, like I do every morning, I thought of these cookies. I haven't made them in so long, but they are so good! So, I thought I'd share. The recipe is from Organic Vegan & Gluten Free Sweets, but you can also find it below. Try substituting the cranberries for blueberries, raisins or any other dried fruit you like. 

Vegan Glazed Oatmeal Cranberry | Makes 2 dozen cookies


  • 91 g. organic coconut spread, softened
  • 68 g. organic sugar
  • 68 g. organic dark brown sugar
  • 1 tsp. organic vanilla extract
  • 1 tsp. organic cinnamon
  • ¼ cup + 2 T. organic coconut milk
  • 255 g. organic flour
  • ½ tsp. sea salt
  • ½ tsp. baking soda
  • 100 g. organic oats
  • 70 g. organic dried cranberries


  • 200 g. organic powdered sugar
  • 3 T. water


  1. Preheat oven to 375 degrees.
  2. In the bowl of your stand mixer fitted with paddle attachment, cream vegan butter, sugar, dark brown sugar, vanilla extract, and cinnamon.
  3. In a separate bowl add gluten free flour, baking soda & sea salt and whisk together.
  4. Add coconut milk and the gluten free flour mixture to the vegan butter mixture, and mix until everything is combined.
  5. On a cookie sheet with parchment paper, start forming your cookie dough balls. When “balling” the cookies, you want your cookie dough balls to be about 2-2.5” in diameter and look like a round disk. Space them at least 1” apart, they will spread a little when baking.
  6. Bake cookies at 375 degrees for 10 minutes.
  7. Once the cookies come out of the oven, allow them to cool before starting the glaze. In a bowl, add powdered sugar and water. Stir vigorously together until combined into a smooth glaze.
  8. Drizzle the glaze over all the cookies.
  9. Eat Cookies!
  10. Store cookies in an airtight container.
